Who doesn’t love an easy meal? I am actually snacking on this as I write this blog post. Not only is this super easy to make, it’s packed full of protein and healthy fats.
You’ll need an avocado, two hard boiled eggs, a cucumber (you’ll probably use about half of one), and Trader Joe’s Everything but the Bagel Sesame. This seasoning mix from TJ’s is so good! I sometimes put it on top of eggs, use it when I make a frittata, and of course to sprinkle on top of this recipe!
You’ll go ahead and cut your cucumber into slices. If you don’t have cucumber you could always put this on top of a piece of toast or if you have chips use it as a dip.
Simply take a fork, mash up your hard boiled eggs and avocado and spread it on top of cucumber slices. Simple, eh?
Last but not least, sprinkle the seasoning on top. Eat and enjoy!
This meal will keep you full and you can feel good about what you’re putting into your body. Let’s talk protein; each egg has about 6 grams of protein and an avocado depending on size has 2-3 grams of protein per piece of fruit. Also, avocado has many other health benefits and is believed to help regulate cholesterol and lower blood pressure, plus packed full of healthy fats.
