This pancake recipe has been tested… A LOT. We eat pancakes once a week… sometimes twice. This recipe is so easy to make and is my go-to. One batch of this pancake mix makes enough for 4 people, and I sometimes store extra in the fridge and make more pancakes the next morning.
You simply mix all the dry ingredients together, then add your wet. I mix it up and add fruit that we have on hand in the fridge, or spruce these bad boys up with some chocolate chips. Whatever is your fancy, do it!
You can substitute 1/4 cup of oil (vegetable or canola) instead of butter. I sometimes do if I don’t have room temperature butter or don’t feel like pulling out a pan and melting it (we don’t have a microwave, gasp).
I usually use whole milk. I have a toddler, that is what we always have in the fridge. If I happen to have buttermilk, I’ll totally use that! You’ll need to add a little more if you use buttermilk, it’s a little thicker (about 2 cups).
